Fettucine Alfredo

Ingredients  (4 servings)

1 Tbs margarine
2 small cloves garlic minced
1 Tbs flour
1 1/3 C milk
2 Tbs cream cheese
1 1/4 C (2 1/2 oz) grated fresh parmesan cheese
4 C cooked fettuccine noodles
2 tsp chopped fresh parsley
freshly ground pepper

Directions
  1. melt margarine in a saucepan over medium heat.  Add garlic; saute 1 minute.
  2. Stir in flour, gradually add milk, stirring with wire whisk until blended; cook 8 minutes or until thickened and bubbly, stirring constantly.
  3. Stir in cream cheese, cook 2 minutes.
  4. Add 1 C parmesan cheese, stirring constantly until melts.
  5. Pour over hot cooked fettuccine; toss well to coat.
  6. Top with remaining 1/4 C parmesan cheese, fresh parsley, and pepper
