I was sitting here board and missing the best ice cream in the world.
Makes 2 quarts
2 cups sugar
8 oz cream cheese (at room temp)
2 large eggs
2 egg yokes
1 tsp vanilla extract
3 cups milk
2 cups whipping cream
1 package crushed gram crackers
1 package raspberry freezer jam
Beat the sugar and cream cheese togeather until smooth and creamy. Beat in the eggs and vanilla. Set aside. In a saucepan, bring milk to a simmer. Slowly beat the hot milk into the cream cheese mixture. Place back over meadium heat and stir until it thickens slightly. Refrigerate until cold. Add in the whipping cream. Use ice cream maker to freeze. You can put thawed freezer jam in when it is slightly thickening or when serving. Serve with the crushed gram crackers.
