Beef Enchiladas

This is a really simple recipe.  And easy if you've got about an hour to have dinner ready.

preheat oven to 350

cheese 4-5 cups grated
2 cans red enchilada sauce
1 lb ground beef
taco sized flour tortillas

1 lb ground beef cooked and drained
3/4 can of enchilada sauce
about 2 cups shredded cheese I like to use chedder or Colby Jack
mix and heat togeather till cheese is melted

lightly spray a baking dish with a no-stick cooking spray
scoop meat sauce in to flour tortillas, roll and place in a baking dish
cover tortillas with remainder of enchilada sauce
then cover with cheese
place in oven and cook for 15-20 min
Serve with sour cream.
